Ummm… Our very first reaction when a spoonful of cold, creamy ice cream goes into our mouth. Let it be summer or winter, two scoops of ice cream in a chocolate cone is delightfully delectable. Ah! What a dainty feeling. Now we have hundreds of flavors. The very thought of ice cream tickles our palate with the softest feeling of the sweetest delight. One such flavor is vanilla.
Vanilla is a spice and the only member of the orchid family that bears fruits. When freshly picked from the orchid, it has no flavor. But when its seeds are crushed and cooked, the alluring fragrance of vanilla sets our mind and taste buds afloat.
Vanilla ingredients are used to prepare ice creams. Typically a small doze of vanilla is used to enhance the flavors of chocolate, nut flavor, coffee and even fruits. Ingredients
• 4 egg yolks • 250ml double cream • 250 ml milk • 100gm sugar • 1 vanilla pod, split vertically into two equal halves, so that the seeds can be seen
Method
1. Take a saucepan. Pour the milk in it. Put it on medium flame and let it slowly come to a boiling point. 2. Take the two halves of the vanilla pods, put them upside down in the hot milk and cover it. Let it stay covered for 20 minutes. This will allow the flavor to infuse in the milk. 3. Meanwhile, take a bowl. Add the egg yolks and sugar. Beat and mix the two carefully until it becomes thick. 4. Then carefully remove the vanilla pod from the milk and scrape out the seeds into the milk. 5. Add this milk to the mixture of egg yolk and sugar. 6. Keep stirring the mixture while adding the milk. 7. Now put this custard back on stove on low flame. 8. Keep stirring the custard until it thickens. 9. Make sure you do not bring it to a boiling point because it may curdle. 10. Then take it off from the flame and allow it cool for some time. 11. Transfer the mixture to an ice cream maker and refrigerate it as per the instructions given in the ice cream maker’s manual.

You may garnish it in many ways as per your choice.
